Recipe for 1 litre (quart) vodka 40%bv
Cut grass into 3-4 cm lengths and macerate in bottle of vodka for about 2 weeks. Filter, add sugar. Place a blade of bison grass in the final bottle for decoration.
- 1g (5-6 blades of fresh bison grass, 25cm)
- 1 tsp sugar
- 1 litre vodka 40%bv
You can also use dried bison grass (Hierochloe odorata):
Zubrowka (using dried bison grass)
Make an essence by macerating the dried bison grass in 170ml of 50%bv vodka for about 2 weeks.
Add 15ml of this bison grass essence to 420ml of 95%bv vodka, 570ml water and 5g sugar.
- 10g dried bison grass
- 170ml vodka 50%bv
- 420ml vodka 95%bv ('Spirytus')
- 570ml water
- 5g sugar (1 tsp)
It appears that each each gram of fresh bison grass has about 12mg of coumarin, the flavoring agent which also has an anti-coagulant property.
